John Partridge Bakes A Cake

Tonight sees the return of the much-anticipated Great British Bake Off. Twelve contestants will step into the tent and attempt to impress judges Mary Berry and Paul Hollywood throughout three challenges, the Signiture bale, the Technical bake and the Showstopper bake.

In honour of the return of our favourite show we are sharing the recipe and method to our favourite bake, the classic lemon drizzle cake.

INGREDIENTS:

  • 4oz butter, softened

  • 8oz caster sugar

  • 5oz self- raising flour

  • 1 teaspoon baking powder

  • 2 eggs

  • 2 tablespoons milk

  • finely grated rind of 2 lemons

TOPPING:

  • 6oz granulated sugar

  • Juice of 2 lemons

PREP TIME:  10 minutes
COOKING TIME: 35-40 minutes

METHOD:

  • Grease a roasting tin and line with non stick baking paper. Pre heat the oven to 160ÂşC.

  • Beat the butter in a large mixing bowl until soft and creamy. Add in the caster sugar and mix well, followed by the milk and eggs. Gradually add the flour and baking powder and fold into the mixture. 

  • Pour the mixture into the roasting tin and use a spatula or knife to level the top. Bake in the middle of the oven for approx. 35-40 mins or until the cake springs back when pressed lightly in the centre.

  • Allow to cool for a few minutes in the tin and then using non stick baking paper lift out the tin and allow to cool on a wire rack. Gently remove the baking paper.

  • For the topping - mix the sugar and lemon juice until it has a runny consistency. Drizzle over the cake whilst it is just warm.
